"Karamiso ramen" was first created in 1960 at "Ryu Shangai" in Akayu, Yamagata. Originally a humble soy sauce ramen, its origins trace back to when locals took the soup home and added miso to enhance its flavor. Today, this ramen has gained nationwide popularity, with its distinctive feature, vibrant red miso, placed at the center of the bowl. To fully appreciate its unique taste, gradually melt the miso into the broth, adjusting the spiciness to your preference.
